Wheat is a pale, unfiltered version of old style malted wheat beers, using an equal blend of malted wheat and barley. Sierra Nevada Wheat is mildly hopped in the kettle using Perle hops during the early boil and Strisselspalt for aroma. A top fermenting yeast is used that does not exhibit that strong phenolic and clove character found in some Barvarian Weissbiers. Leaving Sierra Nevada Wheat unfiltered enhances the mouthfeel and allows the subtle malt and hop flavors to come through.
